Morning oatcakes

It’s a public holiday here in Lisbon and the sun is shining, so what better way to start the day!

For all the pancake lovers who prefer a healthier option. These oatcakes are light, fluffy and full of energy which makes them great pre or post workout. Have them with any fresh fruit and a splash of maple syrup. Oh, and they are ridiculously easy to make, enjoy!

Ingredients for 8 pancakes:

1 1/2 cups of blended oats

2 teaspoons of baking soda

1/2 teaspoon of salt

2 teaspoons of unrefined brown sugar

1 1/2 cups of water




Throw the dry oats into a food processor (you can even blend them with a hand held machine). Once your oats are blended (don’t worry if it isn’t a perfectly fine flour) mix all of the dry ingredients in a large mixing bowl. Add the water and whisk well.

Heat a non-stick pan and add a little oil of your choice. Add half a ladle of the mixture and cook until the edges are dry, then flip and repeat.

Serve with fresh fruit, maple syrup and chia seeds or the topping of your choice.
