Eggless American Style Pancakes

Oh sweet Mother Pancake, these are so good! The first time we made these after changing to a plant based diet, we couldn’t believe how good they were without eggs or milk. Having tweaked the recipe a bit, we finally reached PANCAKE PERFECTION this morning. They are so light and fluffy and are amazing served with fresh fruits and maple syrup, give them a try!

Makes 6 pancakes:

1 ¼ cup plain white flour

1 tbsp olive oil

1 ¼ cup water

2 heaped tsp baking powder

2 tbsp unrefined brown sugar

A tiny pinch of salt


Sift the flour, and baking powder into a large mixing bowl and then add the sugar and salt. Mix the oil into the water and add to the mixing bowl. Beat the mixture with a fork or whisk until thick. It’s OK if it’s still a bit lumpy.

Add a tiny bit of olive oil to a hot non-stick pan and add ¾ of a ladle of the mixture. Turn the pancake when the edges are dry and cook the other side. Add a little more oil for each pancake. Enjoy with fresh strawberries, banana, chia seeds and maple syrup. Amazing…
